How is the Endurance World Championship structured and where can I watch it? How many teams/races?

Check around for any stream sites as some races may have them (Suzuka used to) and if not a stream check Youtube as I have seen some on there in real or near real time

I have a motorsport.tv sub and noticed they had EWC coverage. Wow, EWC is awesome. Lots of different strategies. Tire war. Lots of former GP and WSBK stars. Lots of drama.

Watching an endurance race is like binge watching a season of your favorite show. I keep it playing on the TV in my office a couple of hours at a time. It's really entertaining.

You'll watch two former GP stars battle for an hour as they cut through backmarkers. Then someone runs out of gas in the pit lane under yellow (Guintoli at LeMans) and they run the bike down the pit to stay on the lead lap. Someone gets a radiator puncture. Much different than sprint racing.

Pure motorsport. Much more complex than just pace, and a season's worth of story lines and events will unfold in a single event. EWC needs a bigger calendar than 4 events, and run more middle distance 8 hr events.
